Holly has been in the service industry for over ten years and has worked her way up to manager, from serving tables to helping kitchen and bar staff, Holly has great knowledge of all areas of the business and helps ensure we continue to give great service to our customers
Michael Bourbon first ignited his culinary career and learnt the basic skills in Greece where excellent ingredients combined with passion and bonding with others through one of life's greatest pleasures enkindled his admiration of culinary excellence. A long standing passion for food helped to create the ethos that is at the heart of all conceptions for all his dishes.
Michael further developed his skills in Cornwall, it was here that he realised his full potential and began to develop his own unique style of cooking, favouring locally sourced produce with a more technical approach to presentation.
This gastronomic journey brought the young chef to The Knife & Cleaver, an award winning Michelin star gastropub & hotel nestled in the village of Houghton Conquest. After his appointment as Head chef, Michael was able to achieve a AA 2 Star Rosette.
Michael has taken up a new position at The Sugar Loaf as the Head Chef and with the refurbishment commencing in January he is planning on taking influence from the picturesque surroundings of Meppershall and aims to capture the full flavour of each season's individuality.
A combination of innovative cooking methods with traditional techniques he will present an eclectic and varied menu, offering dedicated focus serving seasonal and classical food combinations with the aim of creating a relaxed menu influenced by the seasons as well as being dictated by the beautiful British produce harvested from within local area.
